I am always astonished when people tell me that they 'just don't like veggies,' . But when I ask how they've had them, the answer is usually 'boiled' or 'steamed' ... so basically waterlogged and mushy- I then understand why!
Lets flip that script, because vegetables are vital components of our diet that provide us with vitamins, minerals, and nutrients - plus, when prepared properly they can actually be the star of most meals!
These are my three favorite ways to cook vegetables so they actually taste amazing, and really take very little effort to prepare:
First up:
Oven-Roasted Veggies: The Gateway to Loving Vegetables
Roasting transforms veggies from bland to bold. A client once told me she hated Brussels
sprouts-until she tried them roasted. Tossed in olive oil, garlic, and maple syrup, she took one bite and said, 'Okay... I take it back. I actually LOVE these.'
How to do it:
- Preheat oven to 400°F (200°C).
- Chop carrots, Brussels sprouts, zucchini, sweet potatoes, etc.
- Toss with olive oil, salt, pepper, garlic powder, and smoked paprika.
- Roast 25-35 min, flipping halfway.
Coach Tip: Don't overcrowd the pan! Space = crispiness.
Next Up:
Air Fryer Veggies: When You Want Quick and Crispy
A friend who had sworn off veggies picked up an air fryer and gave them another shot. Her broccoli and mushrooms came out golden and crisp, and she messaged me: 'I never thought I'd say this, but I'm craving vegetables.'
How to do it:
- Choose vegetables that will hold their shape (broccoli, green beans, mushrooms, etc
- Toss them in your favorite marinade
- Air fry at 375°F for 12-15 min, shake halfway.
Optional: Finish with lemon, parmesan, or hot sauce.
And Finally:
BBQ Veggies: My Lazy Girl Summer Dinner Hack
This one's my secret weapon. When I don't feel like cooking, I slice up some veggies, whip up a marinade, and hand them off to my fiancé with a smile and a, 'Hey babe, can you grill these for me?'
He feels like the Grill Master, I get a break, and we both win.
How to do it:
- Slice zucchini, peppers, onions, mushrooms, etc.
- Mix olive oil, balsamic vinegar, Dijon, garlic, salt, pepper.
- Marinate 15-30 min. Grill on medium heat for 10-15 min.
Optional: Serve with goat cheese or fresh herbs for flair.
If you've been struggling to enjoy vegetables, don't start with boiled broccoli. Start with flavor. With crispiness. With a method that actually makes you say, 'Wait, is this a vegetable?' Try one of these this week and let me know your favorite combo!
